Creamy Tomato Soup Recipe

Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 4 cups fresh tomatoes chopped (or two 28-ounce cans of whole peeled tomatoes)
  • 1 cup low-sodium vegetable broth or chicken broth
  • 1 cup heavy cream or coconut milk for a dairy-free option
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar optional, to balance acidity
  • 1 teaspoon dried basil or 1 tablespoon fresh basil, chopped
  • Salt and pepper to taste
  • Fresh basil for garnish optional

Instructions
 

  • Prepare the Base:
  • Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Cook the Tomatoes:
  • Add the chopped fresh tomatoes (or canned tomatoes, including the juice) to the pot. Stir in the tomato paste and dried basil.
  • Pour in the vegetable broth and stir to combine. Bring the mixture to a simmer and let it cook for about 20-25 minutes, until the tomatoes are soft and the flavors have melded together.
  • Blend the Soup:
  • Remove the pot from the heat. Use an immersion blender to puree the soup directly in the pot until smooth. Alternatively, you can carefully transfer the soup to a blender in batches and blend until smooth, then return the soup to the pot.
  • Finish the Soup:
  • Stir in the heavy cream (or coconut milk) until fully incorporated, creating a creamy consistency. Taste the soup and season with salt, pepper, and sugar if desired.
  • Simmer the soup on low heat for another 5 minutes to allow the flavors to blend.
