Sweet potato apple pie Recipe
During this season of the year the crisp air and the Autumn colors invoke a coziness that warrants suitable cozy nourishment. For myself, there is something about seeing colorful food that reminds me of a season of comfort, warmth, and peace. Still though, it can be difficult to have comforting foods that are healthy and tasty. As a mom and a preschool owner responsible for children’s healthy food consumption, I am always looking for familiar cozy foods with little to no sugar. Some of my own favorites are apple and sweet potato pie. In the past I would normally make 2 of these pies and then mix a slice of each of them together. I thought it would feel like I was eating one slice instead of two. But this taste bud inspired a no sugar recipe for a combined sweet potato apple pie. If you would like to make your pie vegan, omit the egg and instead of the 1/3 cup flax seed, add ¾ cup of flax seed. I really feel like I have cheated the sugar adversary with this delicious pie because I can have as much of it as I like!
Sweet potato apple pie Ingredients
Sweet potatoes, vanilla, egg (optional), cinnamon, honey, apples, pecans, lemon juice, ripe banana (optional)
Directions
Preheat the oven to 350*
First, make the sweet potato portion by boiling 4 medium sweet potatoes. They are done when your fork goes right through them. Peel them and place them in a bowl with cinnamon to taste. I like a full 2 tablespoons. Add 1/3 cup of flax seeds, 1 teaspoon of vanilla and 2 tablespoons of honey. (You may choose to substitute the honey with 1 very ripe banana.) Mix this together and then taste it to make sure you are satisfied with the sweetness. You may add a little more honey to your tooth is really sweet. Finally, add 1 egg and mix well.
Coat your bread pan with avocado oil. Your pan should be deep enough to hold two mixtures so at least 1.5 inches. Pour the sweet potato mixture into the pan and set it to the side.
Next, make the apple pie mixture. Cut 3 large red apples into thin, but not paper-thin slices. Wash the apples then coat them in lemon juice. Mix in 2 teaspoons of cinnamon, 2 tablespoons of honey and ½ cup of pecans (omit nuts for those with allergies). Pour this mixture on top of the sweet potatoes. Cook for 45 minutes. Let cool before serving. If you add an egg, be sure to refrigerate leftovers.
Finally, cozy up near the fireplace or a Hallmark movie and enjoy your pie!
Note: The flax seeds help to give the dessert texture so that you do not miss the crust of usual pies. Please make this and tell me if you added or took away from the recipe in the comments. You might add cranberries or raisins or substitute the sweet potato with pumpkin. Let me know!
