Ingredients
  

  • 1 lb ground beef or Italian sausage or plant-based meat for a vegetarian version
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 can 15 oz tomato paste
  • 1 can 28 oz crushed tomatoes
  • 4 cups beef or vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 6-8 lasagna noodles broken into pieces
  • 1 cup ricotta cheese for topping
  • 1/2 cup shredded mozzarella cheese for topping
  • Fresh parsley or basil chopped (for garnish)

Instructions
 

  • Prepare the Meat and Veggies: Heat a large skillet over medium heat. Add the ground beef or sausage, cooking until browned, breaking it apart with a wooden spoon. Add the diced onion and minced garlic, and sauté for another 3-5 minutes, until the onion softens.
  • Transfer to Crockpot: Once the meat and veggies are cooked, transfer them to your crockpot. Add the tomato paste, crushed tomatoes, beef or vegetable broth, basil, oregano, thyme, salt, and pepper. Stir everything together until evenly combined.
  • Cook the Soup: Set the crockpot to cook on low for 6-8 hours or on high for 3-4 hours. The slow cooking process allows the flavors to meld together, creating a rich, savory broth.
  • Add the Pasta: About 30 minutes before serving, break the lasagna noodles into pieces and stir them into the soup. Allow the noodles to cook in the broth until tender.
